ANGUS BEEF
 
Angus are known throughout the world for their ability to consistently produce the finest high quality beef. Pure Bred and Crossbred Angus steers are keenly sought after for pasture and feedlot finishing programs to target high quality beef markets.
 
The superior meat quality of Angus cattle comes from their ability to lay down intra-muscular marbling (taste) fat during the finishing phase, together with excellent tenderness, texture, flavour , meat colour and fat colour. Meat 2 Eat Sells a Black Angus range of Rumps, Scotch fillet and Sirloin as well as A T bone Cut.
 
WAGYU
 
Wagyu is a breed of cattle that originated from the Kobe region of Japan, The Breed was introduced and commercialised in Australia in the early 1990’s. The marbling in Wagyu beef contributes markedly not only to tenderness and juiciness but importantly to taste.
 
Wagyu carcasses scooped the pool at the Casino Beef Week Paddocks to Palates competition which shows that Wagyu beef is a definitely a cut above the rest.
 
Wagyu has a softer fat which improves the meat flavour and taste. The IMF of Wagyu cattle is twice as high in mono unsaturated fat as traditional breeds.
 
This results in a ‘healthier’ product. Research that first identified this higher level of mono-unsaturated fat in Wagyu cattle has also considered that this is the explanation for the characteristic superior flavour. Meat 2Eat sells Wagyu cuts of Rump, Scotch fillet and Eye Fillet.
 
Grain Fed Beef
 
Grain fed cattle are sourced from a fed lot where they have been fed a nutritionally balanced high energy diet for a specific number of days, the minimum being 70 days. Due to the uniformity of the feed, there is a strong consistency in the quality of the product.
 
Grain-Fed Beef has only a marginally higher overall fat content than Grass-Fed product. Grain-Fed Cattle tend to yield a more consistent meat colour, fat colour & can have high levels of marbling.
 
The longer the cattle are on grain the higher the marbling levels. At Meat 2Eat we stock a 100 day and 200 day grain fed yearling in cuts such as rump and scotch fillet.
 
Grass Fed ( Pasture fed)
 
Grass-Fed Beef tends to be favoured by Australians as it is seen as healthy & low in fat. Cattle grazed on pasture absorb carotene (a pigment in the grass) which can result in a yellow coloured fat. And a naturally beefy flavour.
 
The flavour, tenderness and consistency of meat can vary depending on seasonal conditions, location and variety of feed the cattle eat. At meat 2 Eat we stock a range of rumps that have been grass fed including King Island and Green mountain Veal Rump. Other pasture fed products include our yearling T bones and Prime Rib Fillet.
 
MSA
 

MSA ( Meat Standards Australia, ) beef is a tenderness guaranteed grading program implemented by Meat and Livestock Australia.

Individual Beef Carcasses are graded on things such as breed content, meat and fat colour and the ultimate PH level in the meat.  

 

These results allow for the determination to be made on every individual carcass as to the quality and therefore tenderness of it’s meat.  With the appropriate age on the meat you can be assured that every time you select an MSA graded piece of meat, that it will be tender.
